芋儿鸡是重庆一道很常见的家常菜之一,鸡肉细滑,芋儿耙糯,那这样一道好吃的芋儿鸡是怎么做成的呢?
首先它的主要原料为新鲜的鸡肉、豆瓣酱、芋头再加一泡椒,香料等辅料。经过爆炒之后再加水慢炖成红烧就可以了。
一、先把芋头切成滚刀块,泡椒剁碎、老姜切成姜末,大葱切段、香菜切碎。
二、锅中倒入食用油,然后下花椒泡椒和两勺豆瓣酱炒香,炒出红油后下姜末和八角。
三、然后下鸡肉,这时可以往锅里倒一点料酒去腥,而且还可以增加鸡肉的香味,然后不停的翻炒把料酒的味道炒出后,碗锅中加入适量清水没过鸡肉即刻。
四、然后再往锅里下入芋头。盖上锅盖小火慢炖半个小时,直到鸡肉和芋头炖到耙糯为止。就可以打开锅盖进行收汁,然后放入少量的鸡精和使用盐调味即可,想上葱花就可以起锅装盘了。
